Tomato Basil Pasta with Guac-Sauce

This recipe is so good I’m literally eating it as I write this post. Seriously. If you even remotely like guacamole or avocados, do not pass this one up! It’s creamy, fresh, easy to make and healthy… what more could you want??Cook Time:15 mins | Serves 6 people

Ingredients:

  • I bag or box gluten free fusili pasta
  • 2 ripe avocados
  • 3 cloves garlic, minced
  • 1/2 cup fresh chopped cilantro
  • 1/4 cup lemon juice
  • 3 tbsp olive oil
  • 1 cup cherry tomatoes, quartered
  • 2 fresh basil leaves, chopped
  • 1/2 cup shredded parmesean

Tomato-Basil Pasta with Guacamole Sauce

    1. Cook pasta in a large pot until just done, and reserve 1 cup of cooking water before straining
    2. Return pasta to the pot and coat in olive oil
    3. Add the avocados, garlic, cilantro and lemon juice to a food processor
    4. Pulse until the avocado is fairly mashed, pushing down with a spoon
    5. Add 1 cup reserved pasta water
    6. Process on medium/high until combined
    7. Stir tomatoes and basil into pasta
    8. Cover the pasta in guac-sauce!!
    9. Stir in parmesean cheese
    10. ENJOY!!!
